THE TASTE OF ITALY - SPRITZ & PROSCIUTTO WRAPPED FIGS

FRESH BAKED FIGS WRAPPED IN PROSCIUTTO       (SERVE WITH OR WITHOUT GORGONZOLA CHEESE CREAM SAUCE) 

INGREDIENTS

Select 3-4 fresh figs per person

1 thin slice of prosciutto per fig

Optional

small cube of Gorgonzola Cheese

150ml cream

 

METHOD

Set oven to 190 degrees (fan forced)

With a sharp knife cut off the stem of the fig, then make a small X cut through the open top. (sufficient to allow a small piece of Gorgonzola to be inserted if using this variation).

Wrap/roll each fig with a slice of prosciutto (fat edge to the top - allows it to cook crisply) 

Place the wrapped figs in a small baking tray and bake for 12 minutes or till prosciutto is crisp.

Allow to sit for several minutes.

Pour pan juices over the top and serve.

For a richer variation, prepare as above, inserting a small piece of Gorgonzola into each fig prior to placing in oven.

Once cooked, remove figs to another dish and cover with foil to maintain heat.  

Place the pan on stove and stir the cream with the pan juices with a wooden spoon till it thickens slightly. 

Taste test, add a little extra Gorgonzola if required for a stronger sauce. Add pepper to taste. 

Check the figs and pour in any additional juices.

Plate and pour sauce over figs and serve.

TIPS:  Some slices of prosciutto may be a little thin, if in doubt or you have particularly big figs, simply wrap with an extra slice. 

Gorgonzola is quite a strong flavoured cheese, your personal taste will determine size, we recommend 1/2 a teaspoon is ample per average sized fig.
