1 bunch white asparagus
1 tablespoon butter

1 With a vegetable peeler, peel the asparagus from top to bottom then cut off the woody ends with a knife and discard.
2 Bring a large saucepan of water to the boil. Add the salt, sugar and butter. Return to a simmer and add the asparagus. Simmer uncovered over low heat 15-20 minutes, checking with a knife to see if the asparagus is tender.
3 Drain and serve with pan-fried prosciutto ham, hollandaise sauce and chives.
